Peppermint Brownies RecipeMakes 9 large brownies

Ingredients

Brownies

  • ½ cup unsalted butter melted and cooled
  • ¼ cup canola oil
  • 1 ⅓ cup sugar
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • ½ tsp peppermint extract
  • ½ cup all purpose flour
  • ½ cup cocoa
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup chocolate chips

White chocolate topping

  • ⅓ cup heavy cream
  • 1 cup white chocolate chips
  • Peppermint candies

Instructions

  1. Preheat oven 350. Spray with Pam a 9×9 square and line with parchment paper.
  2. In a medium bowl whisk melted butter, oil and sugar.
  3. Add eggs, vanilla and peppermint extract
  4. Whisk flour, baking powder and salt into butter mixture until combined
  5. Fold in chocolate chips
  6. Pour into pan, bake 23-25 minutes or until done
  7. While brownies are cooling, make white chocolate ganache.
  8. In a microwave safe bowl warm up the heavy cream for about 30-40 seconds until it starts to bubble
  9. In a small bowl pour the warm heavy cream over the white chocolate chips, let sit for a minute and whisk together. Let cool for 10 minutes
  10. Pour the white chocolate ganache over the peppermint brownies, using an offset spatula to smooth the ganache
  11. Sprinkle with peppermint Ghirardelli or candy canes
